Environmental Education for Head Start Teachers & Parents

I'd like to know if there are any environmental education projects to educate Head Start children and parents about environmental pollutants. More specifically, I'd like to know if anyone is doing it in the Mississippi Delta. Does anyone have experience educating and motivating adults with low literacy levels on how to understand and respond to their water quality reports and about the effects of environmental pollutants? What was successful? What factors were important to effectiveness?
